Hand-harvesting of the Savatiano variety in small crates. The whole grapes are frozen at –20°C for 4 days. The frozen grapes are then pressed whole using a manual vertical press. The yield is approximately 12%, as almost all the water in the berries remains frozen. This results in a highly concentrated must, which ferments in a new 300 L French oak barrel with indigenous yeasts.The wine is aged for 3 years in barrels and then bottled in 0.500 L bottles with minimal intervention.
Ageing potential: 20+ years.
Οργανοληπτικά χαρακτηριστικά
Deep golden colour with pronounced “legs”, reflecting the wine’s high concentration. On the nose, aromas of dried fruits (plum, fig, apricot), roasted hazelnut paste, salted caramel, with notes of spices and red pepper. On the palate, there is an excellent balance between sweetness and acidity, rich texture and full alignment with the aromatic profile, leading to a long, persistent finish.
It pairs beautifully with a wide range of desserts such as mille-feuille, crème caramel, dried fruits and dark chocolate. It is also an ideal pairing for cigar lovers.
