Vinification & Maturation
Manual harvest in mid-September results in overripe grapes with distinct flavor characteristics. The grapes are pressed, with alcoholic fermentation occurring without the addition of sulfites, using native yeasts, and the addition of the resin from Aleppo pine at a dosage of 30g/HL. Then, a portion of the grape-berries, carefully handpicked and frozen, is added, enhancing the wine’s flavor and aromatic profile. The grape-berries remain for 30 days with the fermenting must. There are no oenological additions or treatments throughout the production and bottling process. Unfiltered.

Organoleptic Characteristics
Medium orange color with a mild, distinct haziness. Its aromatic and flavor complexity is notable: a rich and complex aroma of tropical and stone fruits, citrus peel, with intensity and duration. The herbal note from the resin addition blends excellently with the primary and secondary characteristics of the variety.
On the palate, the flavor complexity confirms the aromatic composition. The rich aftertaste gives the sensation of a full-bodied wine.
It pairs particularly well with dishes where many wines cannot, such as stews, legumes, oven-baked stuffed tomatoes, boiled meats, and soups. It can also be combined with cheeses that have distinct flavor profiles, such as blue cheeses. In international cuisine, it pairs exceptionally well with sushi and sweet-spicy options.
